A beautifully balanced Sauvignon Blanc full of rich ripe green fruit characters, balanced with the biscuit and buttery characters from the oak fermentation and aging. A dry wine with medium weight.
This is a 100% oak barrel-fermented Sauvignon Blanc, using natural indigenous yeasts. The fermentation was extended over a period of three months. The wine was stirred in each barrel to keep the yeast cells in suspension, which aids in developing a creamy texture to the wine. The selected grapes for this wine are spur pruned low cropping from our Stirling vineyard in the Waipara Valley. This special occasion Sauvignon Blanc is not for the faint-hearted, full of rich round and complex flavours.
